Hind Quarter Meat Co. began its journey in 2021 as a unique pop-up delivery service with a vision to bring exceptional meat directly from local farmers to your table. Our commitment to quality and passion for the craft led us to evolve and expand our offerings. Today, we proudly offer a wide array of products, including custom dry-aged beef, handcrafted sausages, gourmet burgers, and more. We are honored to have received the prestigious CommunityVotes Barrie award for Best Butcher Shop in 2022 and 2023, even without a physical storefront. Now, we're excited to announce that we've made our dream of opening a full-service butcher shop a reality!

Location

Our store is conveniently located at the corner of Mapleview Drive W. and Veteran's Drive. Here, you'll find a diverse selection of fresh, locally sourced meats, all from the same trusted suppliers and farmers we've partnered with over the past two years. We've expanded our offerings to include exciting products from specialty producers, always with a focus on local sourcing whenever possible. In addition to our exceptional cuts of meat, we offer a delightful range of in-house prepared meals, soups, sauces, and side dishes.

A Message from Our Founder, Jack Clarke

Ever wondered how I became a butcher? Well, let me share my journey with you! My culinary adventure started in restaurant kitchens, where I refined my cooking skills in fine dining establishments across Ontario. It was during my time at a French bistro in Kingston that I first dabbled in butchery. Although the sous chef despised it, I fell in love with the art of butchery. I volunteered to help and began to master the craft, from cutting steaks and lamb racks to preparing tenderloins and prime ribs.

My passion for butchery grew when I moved to Toronto and joined one of the city's top high-end butchers. Here, I had my first taste of dry-aged beef, an experience that changed my life. The precision, speed, and attention to detail in butchery were captivating. The commitment to minimizing waste and respecting animals and farmers filled me with pride.

Over 15 years later, I'm still thrilled to cut into a piece of aged beef and am constantly seeking ways to enhance my skills and create exciting new culinary delights.
