A team of four students in the Hospitality Specialist High Skills Major (SHSM) program at Twin Lakes Secondary School will showcase their culinary skills in the High School Chef Competition at The Royal Agricultural Winter Fair on Nov. 6.
Classes were asked to create a dish that uses at least three greenhouse vegetables, is an easy, nutritional option for high school cafeterias, meets the Province of Ontario’s School Nutrition Standards and demonstrates originality and culinary proficiency. Three teams from across the province have been selected to compete and prepare their recipes live at The Royal.
"The students have been working hard preparing for this challenge and we feel confident going in,” says Tanner Griffin, hospitality teacher at Twin Lakes Secondary School. “They’ve had to learn a lot of new techniques in preparation for the competition.”
The students will prepare Tomato Mozza Stuffed ThunderBird, a recipe that features breaded and pan seared chicken breast stuffed with roasted peppers, mozzarella and tomatoes served on a bed of fresh sautéed spinach.
The meal will be presented with duchess potatoes with homemade cheese sauce and a side of maple glazed carrots, all topped with crispy local spaghetti squash and fresh parsley.
The competition takes place from 10 a.m. to 12 p.m. at the Enercare Centre, Exhibition Place, located at 100 Princes’ Blvd., Suite 1 in Toronto.
